On 12 November 1853, Ellen Mathews was born in County Westmeath, Ireland.  Later in 1858, her sister Annie was born in County Galway.

It is not known when the sisters arrived in New Zealand.

Ellen entered the Sisters of St Joseph in Whanganui on 7 March 1883, just three years after the Sisters had arrived from Australia.  She was professed as Sister Rose on 22 August 1884.  Her sister Annie also entered the Congregation after her in 1883, and was professed in 1886 as Sister Bridget.

In March 1886 before her final profession, she was elected as Assistant to Sister Joseph Kinsella, and she was also chosen as Assistant to Sister Clare Rubie in April 1889.  She was again Assistant from 1893 to 1895, and in 1926 was elected a Counsellor.

The two sisters, Srs Rose and Bridget were later to be followed into the Congregation by relatives Srs Bernard and Casimir Cleghorn, and later again Sister Miriam Prior.

Sister Rose died on 8 November 1928.  She was buried at Heads Road Cemetery, Whanganui.
